Vinificazione
The best grapes, coming from the oldest vineyards and with the best exposure and adaptation of grapevines, are destemmed when they arrive to the winery. After a soft pressing, the grapes are put in fermentation with inoculation of selected lees in steel fermenters with automatic remontage. Alcoholic fermentation lasts about 15 days. After the separation from the skins, the wine undergoes malolavtic fermentation in steel at controlled temperature. Aging takes place in barrique and tonneau for 18 months, ending with a bottle aging for 12 months.

Tasting notes

Colore Intense ruby in colour and hints, Exubera is rock: at the nose it’s disruptive and explodes strongly in notes of ripe red fruits and wild violets, alternate with a balsamic note of eucalyptus, liquorice, white pepper and cinnamon.
Profumi It welcomes with the citrusy, but also alcoholic and spicy notes of kumquat jam braided with deep tones of ripe plum. Notes of cocoa powder and cloves peek at the subsequent smellings.
Al palato Vibrating, it reveals its Rock soul: warm and enveloping, intense and armonic, with an important tannin that gives structure and power, but well balanced with an elegant and unforgettablefinish. It masterfully draws its land of origin, keeping concentration and freshness and an unique persistence.
