Vinification
The best grapes are cooled, destemmed and lightly pressed avoiding the skin laceration, then put in fermentation. The alcoholic fermentation lasts about 8 days, then the wine stays on the skins for 5 days. After the malolactic fermentation, the aging lasts 24 months in barrique then 12 months in bottle.
