After bottling follows the period of aging in bottle.
A thinning of the less mature bunches, with health problems, was carried out after the harvest, optimizing the processing time of the grapes. Upon arrival in the cellar, the grapes were destemmed, pressed and cooled to a temperature of 18 ºC.
Fermentation with the inoculum of selected yeasts in a steel ferment equipped with automated cooling and pumping over. The pumping over began after having reached a percentage in alcohol such as to extract a good amount of tannins, so that these, binding to the coloring substance, stabilized over time. The alcoholic fermentation lasted about 8-10 days.
After separation from the skins, the wine conducted malolactic fermentation in steel at controlled temperature.
The 2021 vintage is scarcer in quantity than the average, as widely expected. The initial dry period, the September rains, which accompanied the grapes, in particular the red ones, in the last two weeks before the harvest, bringing back balance in beans that are not very generous in terms of yield, but very rich in content. The harvest was slightly anticipated by about 6-7 days compared to the last years. Health status of the grapes entered the cellar always very good.
Intense and luminous ruby red. Scents of black cherry, vegetables and sweet spices. Structured wine, soft and excellent to drink, the latter helped by the vigorous freshness. We recommend consumption at 18 degrees with an early opening of the bottle before consumption. Wine that endures aging for 4-5 years. Pairing with structured first courses and pork and game.
