The wine is aged in barrique and large cask for 18 months and another 6 in bottle.
Manual selection of the best bunches in boxes of 15 kg in the early morning.
Upon arrival in the cellar the grapes were destemmed and lightly pressed avoiding tearing of the skins.
Fermentation with inoculum of selected yeasts in steel ferment with cooling system and automated pumping over system. The pumping over began after having reached a percentage volume in alcohol such as to extract a good amount of tannins. Alcoholic fermentation of about 10 days. After separation from the skins the wine conducted malolactic fermentation in steel at controlled temperature.
Winter in line with the seasonal trend, abundant spring rainfall with a consequent lowering of temperatures that caused an extension of the
vegetative growth of the plant. Hot and dry summer with heat peaks above the seasonal average that allowed the recovery of the vegetative development of the vine.
The late summer rains favored the water recharge of the soil with a consequent rebalancing of ripening of the fruit.
Very intense ruby red color with garnet reflections. The nose is complex and intense and is characterized by its scents of plum jam,
rhubarb, bitter cocoa, sweet spices and candied citrus. Very persistent in the mouth is a wine of great body and structure, warm. It endures long aging even of 15/20 years. We recommend serving at a temperature of 20 degrees after pouring the wine carefully in a carafe, opening it in advance. In combination with succulent dishes, fatty meats, braised.
