White grapes authorized in Umbria.
Fermentation, using selected yeasts, of the base wine at a controlled temperature between 13 and 14 ºC in steel.
Grapes harvested in late August in the early hours of the day where temperatures are lower. Upon arrival in the cellar they are cooled with dry ice. After the soft pressing of the grapes, the must undergoes a static decantation for 24 hours.
Refinement in closed autoclaves at a controlled temperature between 14 and 18 ºC with periodic remuage and long aging on the lees of at least 6 months.
Winter in line with the seasonal trend, abundant spring rainfall, with a consequent lowering of temperatures, which caused an extension of the vegetative growth of the plant. Summer tends to be warm, with heat peaks above the seasonal average that allowed the recovery of the vegetative development of the vine. The late summer rains favored the water recharge of the soil with a consequent rebalancing of ripening of the fruit. Grapes harvested in perfect health.
Straw yellow color with greenish reflections and very intense bubbles, persistent and fine grain. Scents of yellow fruit and citrus. Slight sensation of bread crust and pine needles. In the mouth has a vertical attack of great freshness well supported by a ripe fruit. The finish has a long minerality. Serve at 6 ºC, to drink as an aperitif and on raw seafood.
