Wine aging on the lees in steel for 5 months.
Grapes harvested manually, in the early morning hours, at the lowest temperatures of the period and cooled on arrival in the cellar, thus avoiding the principles of oxidative phenomena that can compromise the aromatic potential. Short skin maceration necessary for the extraction of the color and aromas present in the skin; After that it was proceeded with soft pressing of the grapes in an oxygen-free environment, so as to slow down the oxidative activity of enzymes as much as possible.
Static decanting for 24 hours to clean the must, inoculum of yeasts selected to trigger the alcoholic fermentation which took place at low temperature for 12 days, in steel.
The 2022 vintage is characterized by low rainfall both in autumn-winter and spring-summer. Even at the temperature level the values were almost always above the average of the period thus bringing an advance of all the phenological phases of the vines.
The rains arrived after mid-August and at the beginning of September allowed the grapes, in particular the red ones, to regain the balance of the grains, initially not very generous in terms of yield, but very rich in content. The ripening, a little early, has led to a general harvest of both white and red grapes.
It has a cerasuolo pink color and expresses aromas of pomegranate, strawberries, cherry blossoms and broom. The mouthfeel is fresh and savory with a wrapping and elegant finish. Serve at a temperature of 12-14 ºC, in combination with summer salads, sea soups, Mediterranean first courses.
