Chardonnay
The flower must is statically decanted for 24 hours and then inoculated with yeast selected for alcoholic fermentation.
The grapes used for making the base wine are harvested manually, selected and placed in
perforated boxes of 10 kg. Once you reach the cellar, the grapes are cooled with ice dry and subjected to soft pressing in pneumatic press (0.2 atm).
After the fermentation in the bottle, the wine remains on the lees for a minimum period of 48 months.
The winter rains have originated a good water reserve and together with a mild spring have generated an optimal vegetative cycle. The hot summer season has preserved the grapes from parasitic attacks and diseases in general, while the rains at the end of August have remedied the great heat of August. It was obtained a grape in perfect health conditions, with excellent sugar content and with satisfactory maturation. The high temperatures of August slowed the ripening of the grapes reached only in September.
It has an intense straw-yellow color with a perlage of numerous bubbles, persistent with a fine grain. To the nose are appreciated sensations of bread crust, citrus fruits that are well integrated with a brackish finish. In the mouth it is full, round despite a marked freshness; the finish has great sapidity. It goes well with sea fish, in particular molluscs and smoked and medium structured first courses of the sea. To be served at 6/8°C.
