Quality Sparkling wine “Blanchus”

The process

The grapes were harvested in late August early in the day, when the temperatures are lower, and cooled with dry ice on arrival in the winery. After light grape pressing the must undergoes static settling for 24 hours. Fermentation of the wine with selected yeasts takes place at controlled temperatures between 13° and 14° C in steel. After that, ‘prise de mousse’ takes place in closed autoclaves at controlled temperatures between 14° and 18° C, with periodic remuage and long ageing on the lees for 9 months.

Tasting notes

Straw yellow with greenish hues and a perlage of numerous, persistent fine-grained bubbles. Yellow and citrus fruit aromas. Slight sensation of bread crust and pine needles. The mouth has a very fresh vertical attack well supported by ripe fruit; finish of long minerality. Serve at 6° C, to be drunk as an aperitif and with raw fish.
