Static decantation for 24–48 hours to clarify the must, followed by inoculation with selected yeasts to initiate alcoholic fermentation. Fermentation took place at low temperature for 12–14 days in stainless steel tanks.
White vinification with gentle pressing of the grapes in an oxygen-free environment, in order to slow down the oxidative activity of the enzymes as much as possible.
The wine was matured in stainless steel for 4 months. This was followed by the blending of the batches and an additional ageing period in steel. Finally, the wine was bottled and aged for a further 2 months.
The long, mild and rainy period, which extended from autumn through late spring with above-average seasonal temperatures, characterized the vine’s vegetative cycle, leading to an early bud break and flowering. The persistent rains encouraged vigorous vegetative growth and also replenished underground water reserves, contributing to the plants’ steady and lush development. The quality and health of the grapes remained consistently very good.
With a vibrant and agile straw-yellow hue, it releases tropical aromas and yellow peach that lead into citrus notes, orange blossom, rosemary, and wild thyme. On the palate, it is generous yet smooth, with a mineral finish typical of its terroir. Best served at 10–12°C, paired with Mazara red prawn and strawberry tartare, seafood risotto, or Roccaverano robiola cheese.
